Exploring Taiwan


Rewind to the summer of 2016.We had a week off from work for vacation. Time is precious so we decided not to waste it. I concocted a plan with my partner in crime to escape from our mundane lives.Taipei, Taiwan became our destination and the rest is history….


It was a short flight, around 2 hours from Korea to Taiwan. We landed after midnight, took a taxi with a guy who seemed to be an ex-NASCAR driver and made our way to our airbnb. Our host was very hospitable and showed us all the in and outs of where we would be staying for the next six days. Sadly I lost the pictures I had taken of the airbnb but it was sooooooo nice. Lots of space, really clean and quiet.


We spent our days exploring Taipei and even ventured out to Taichung and Jiufen. We visited Taipei 101, Elephant Mountain, night markets, arcades, a bathroom themed cafe that I also lost the pictures to, Rainbow Village in Taichung, the stunning old streets of Jiufen, the Golden Waterfalls, and the Ying Yang sea. The sun was scorching, the people were charming, and the beef noodle soup was absolutely divine.

The last day of our trip was spent on the northern coast of Taiwan, staring out into the Pacific…. wondering where to go next…………..

Begin Again.


It’s been so long and I don’t know where to start. Pick the pen up… put it back down…Type a few lines..then delete it. This was a vicious cycle that lasted for a couple of months. Those months turned into a year and some change…

It’s been a little over a year since my last entry and so much has changed since then. If you are familiar with my blog (hopefully my readers have stuck with me ><) then you know that I experienced a life changing adventure in the fall of 2013. From late August to December, I was an exchange student in Seoul, South Korea at EWHA Womans University (and yes I spelled that correctly).

After the program ended, I returned home, clawed my way through my last semester of college and then graduated with a BBA in International Business. In the summer of 2014, I took on an unpaid internship at the Mayor’s office. I know it sounds real fancy but I only met the Mayor once. Understandable. I’d imagine he’s a pretty busy guy. I worked there for only three months but I learned some valuable skills and had some exceptional experiences there. August came. I left….

Late August and September was spent not doing much. I became a homebody that sat in front of my laptop screen, picking away at the keys and trying to complete course work for my master’s degree in Marketing. With my eyes closed….

I open them and it’s October. One random day I went into my optometrist’s office for a checkup and left with a job. For the next few months I would assist her with administration work. An official office worker. Look at me adulting. Could this be it? Have I reached my goal? I could just stay here. Pay is good and the job was a skip away from my house. Everything was comfortable. But by the end of January I had become uncomfortable with how comfortable I had become. Something had to change.

Fast forward to August and in the wee hours of the morning, I was scrambling in the dark. Trying to gather loose odds and ends that I hadn’t yet packed. I was on my way back to South Korea but this time switching roles from student to teacher. No time for second thoughts. I’m already at the airport checking in my luggage. There’s just something so exciting and gut wrenchingly terrifying about change. But I boarded the plane, taking my flight into the unknown.

That was 2015. Now it’s 2017. I finished my year contract at one school and now I’m at another. But that feeling has come back. I know that my time being a teacher has an expiration date on it because it’s honestly not my passion. What is my passion you ask? Well, I’m like 98% sure it’s photography. Yes 98% sure. How much longer will I be in Korea? I honestly don’t know. But I’ll continue to soak in every moment here.. until it’s time to move on. Whether it means going back to America or some other country, I’m excited to see how this year pans out. I’m ready for the mystery that is 2017. I’m ready for the twists and the turns, the adventures, and the growing pains..

I’m ready to begin again.

Extremely ASHER is in its second year, and I would sincerely like to thank my followers for sticking with me! Actually, that “thank you” goes to anyone in general who reads my blog.

I looked through all of my archives the other day and literally cringed while reading my older posts. When I first started out, I had no idea what I was doing; one of the posts included one picture with a single sentence. I was going to delete some of the older posts but later decided to leave them up because it’s always nice to look back and see how you’ve grown. I’m no expert on blogging now, but I know I’m getting better and I’m excited for all of the growth to come.

I’ve added a new section to the blog entitled, “Life + Style”, and this will be the first post of that section! Other things to come will be hauls and reviews, maybe some OOTD’s, and posts regarding my blogging experience. I can’t wait to update the other sections too with new photography, food therapy’s, and hopefully taking trips so I can have some fresh travel stories (I still have to finish the ones from Korea!).

I can say with confidence that this will be the best year yet for EA……….. stay tuned 🙂

Piña Colada Cupcakes

Before getting started, I just wanted to say that while making these cupcakes I got inspired to start making things from scratch. So for Thanksgiving I made my very first homemade cake from a recipe that I found in an old cookbook. While my family didn’t let me get a chance to take a picture of it, I did manage to take a picture to share the recipe with you guys.

Now on to the cupcakes! My main ingredients for these cupcakes were pineapple flavored cake batter, shredded coconut, vanilla frosting, and even though three cans are pictured I only used 1 can of the crushed pineapple.





The process was pretty simple since I only had to follow the directions on the box. I’ve never tasted this flavor of cake mix before, so I wasn’t sure if it had enough of a pineapple taste to it. I decided to add in the crushed pineapple to give it an extra kick.


When baking cupcakes (or anything) I always eat one when they come out of the oven. Just to see if they turned out right 🙂 These cupcakes came out a nice warm golden color and tasted excellent. The little pineapple chunks gave it that perfect extra flavor and texture.

I’m sure you can find many creative ways to decorate and add in the coconut but after they cooled, I just iced them and added the coconut flakes on top………..


I made these for a special occasion, and the pink tins and the pink and white straws were chosen to match the rest of the party decorations.


Since coconut is a favorite here in my house, I’m making a homemade coconut pound cake for Christmas. This time I’ll get pictures!
